Summer Ease

Summer is the best time to drag out the slow cooker.  Come home from a hard day at work and dinner is ready without adding any extra heat to the house!  Here's a great one to get you started:

Beef and Gravy over Potatoes

Ingredients:

2 pound roast (it's going to be in the slow cooker all day...buy the cheap one!), cut in small pieces.
1 can beef broth with onion
1 envelope onion soup mix
1 can cream of mushroom soup
1 8 oz can sliced mushrooms (can be eliminated if you have a mushroom-phobe like I do!)
6 medium potatoes, scrubbed

Directions:

Spray the slow cooker with non-stick spray.  Mix all ingredients except the potatoes in the slow cooker.  Lay the potatoes gently on top.  Cover and cook 5-6 hours on high.  Uncover and remove the potatoes.  Cut each potato in half and plate.  Spoon the beef and gravy over the potatoes and serve.
