Chili Pie Casserole

It is getting cooler in the northern realms and we are down below 80 degrees in the morning here on the Gulf Coast.  In anticipation of cooler weather, here is a classic fair food translated for a full family meal!

Ingredients:

2 20oz cans of chili (with or without beans, your preference)
1 16 oz package corn chips (I get the store brand for this recipe)
1 chopped medium onion
1 package shredded cheddar cheese

Directions:

Heat the chili in a saucepan on the stovetop.  In a 9x13 pan, layer the corn chips, chili, onion, and cheese using one third of each at a time.  Repeat the layer twice more ending with cheese on top. Bake at 325 degrees for 20 minutes.

Enjoy!!
