1 1/2 lbs ground beef
1 jar salsa
1 can green chilies
2 cups pepper jack or Mexican blend cheese, shredded, divided
2 boxes cornbread mix
1 can refried beans
1 can whole kernel corn, drained
In a bowl, prepare cornbread according to the package directions and add 1/2 can of corn. Set aside. In a skillet, brown the ground beef and drain. In a large bowl, combine browned ground beef, salsa, chilies, remaining corn, and 1 cup of the cheese. In a 13x9 pan (well greased), spread the refried beans. Top with meat mixture and sprinkle with remaining cheese. Top with prepared cornbread mixture. Bake at 350 degrees for 25 minutes and cornbread topping is lightly browned.
