Winter is the perfect time to enjoy carbs...and here's a sweet one to enjoy!
2/3 cup sugar
2/3 cup melted shortening
4 cups flour, sifted
2 Tbsp baking powder
1 tsp salt
1 1/2 cups chopped nuts (I prefer walnut, but you can also use pecans)
2 cups crushed pineapple, drained
Beat eggs and sugar together and stir in shortening. Add flour, baking powder, and salt. Blend well. Add nuts and pineapple. Stir only until combined. Pour batter in to two greased loaf pans. Bake at 350 degrees for one hour. Bread can be frozen for storage.
