Leftovers

The holidays are over and the fridge and freezer are stuffed.  It's time to get creative and turn leftovers in to something that won't send the family running screaming from the kitchen.

One of my most vivid memories from childhood is leftover night.  My stepmother saved the little aluminum tins (so dating myself here!) that pot pies used to come in and each one would be placed on a cookie sheet with a different serving of leftovers in it.  After heating in the oven, we were allowed to choose the tins we wanted to eat.  It was a creative way to use up the leftovers and give us a bit of autonomy over what we chose to eat.

Another popular use of leftovers is soups and stews.  You can combine meat and vegetables in to something new.  They also freeze well and serve many.

Head on in to the kitchen.  Take a pad of paper and a pen.  List all of the leftovers you have.

Go online.  There are a number of websites where you can enter the ingredients you have and they will suggest recipes using those ingredients.  Try something brand new.

Enjoy!!
