Ingredients:
1 1/2 lbs. tomatoes (about 7 large)
1 small onion
2 jalapeno peppers
2 Tbsp lime juice
2 Tbsp minced cilantro
1 tsp salt
Directions:
Seed and dice tomatoes. Place in a medium size bowl and grate the onion on top. Wearing gloves, peel, seed, and mince the peppers. Add to the bowl. Add lime juice, cilantro, and salt. Mix well. Cover bowl and let set in the fridge overnight.
